Poule & Poulette, the chicken specialist that offers a breakfast package

Poule & Poulette is continuing its expansion in Belgium with a new establishment in Bruges. In addition, the brand is innovating with a new formula: the launch of the 'ontbijtbuffet' breakfast at 6.69 euros exclusively reserved for customers in Bruges.

The traditional restaurant sector in Belgium is undergoing profound change. Over a period of five years, traditional restaurants have lost around 15%, while fast food outlets have grown by 70%. In the space of five years, the importance of traditional restaurants in consumers' spending has significantly decreased, in favor of a growing demand for convenience food and quick service restaurants (QSR). However, in this competitive environment, some concepts are emerging as real success stories. Poule & Poulette, alongside brands such as Bavet and Hawaiaan Poke Bowl, perfectly illustrates this trend of innovative concepts.

Poule & Poulette is a bold and appealing concept. Since its creation in 2014, Poule & Poulette has established itself as a key player in this transformation. By focusing on a concept centered around quality chicken, the brand has set itself apart with an innovative and accessible approach. Its rapid expansion – with nine restaurants already in Belgium and a new opening on March 26 in Bruges – is evidence of a growing enthusiasm for this type of hybrid restaurant, which is a blend of authenticity and efficiency.

Poule & Poulette's success is based on its ability to meet new consumer expectations: fresh products, an immersive customer experience and speed of service that does not compromise quality. The launch of the 'ontbijtbuffet' formula in Bruges is a perfect example of this. For 6.90 euros, customers can enjoy a hearty breakfast, combining artisan bread, pastries and hot drinks, in a warm and well-kept setting.

An agile and responsible economic model

Where traditional restaurants suffer from high fixed costs and operational inflexibility, Poule & Poulette relies on optimized management and centralized production to guarantee consistent quality and limit food waste. By working with a single supplier, the brand ensures complete traceability and a sustainable approach, essential values for attracting customers who are increasingly concerned about the origin of their food.

Towards a restaurant of the future? While the classic model of the brasserie or traditional restaurant is running out of steam, brands such as Poule & Poulette prove that it is possible to reinvent the culinary experience by combining the best of both worlds: authentic products, fast service and a strong identity. With an ambitious development strategy and a keen understanding of market developments, the brand is establishing itself as a real game changer in the Belgian restaurant landscape. This year, Poule & Poulette achieved 12.5% growth in these points of sale. In 2020, it achieved a margin of more than one million euros.

Does the future of the restaurant business lie in these hybrid concepts that combine quality and speed? One thing is certain: Poule & Poulette has been able to capture the spirit of the times and impose its gourmet signature in a market undergoing profound change.
